Leftover Thanksgiving Recipes

If you're anything like me, leftovers are where it's at this coming week - I love cooking once and stretching that effort out for many more meals. 

I wanted to share with you my favourite Leftover Turkey Recipes  please send me your favourite leftover recipes!


TURKEY POT PIE


INGREDIENTS

  • 4 tbsp butter
  • 2 potatoes (cubed)
  • 3 carrots (chopped small)
  • 1 onion (chopped)
  • 2 celery stalks (chopped)
  • 2-3 cloves minced garlic
  • 6tbsp flour
  • 3 cups chicken broth
  • 4 cups turkey (shredded/cubed)
  • 2/3 cup frozen peas
  • ½ cup +1 tbsp. cream
  • 1 tbsp parsley
  • 1 tsp salt & pepper
  • 1 egg
  • Pillsbury pie crusts (1 pkg has 2 rolls in it)

INSTRUCTIONS

  1. Set oven to 375F
  2. Saute butter, potatoes, carrots, onion, celery & garlic.
  3. Stir in flour. Gradually add broth and bring to a boil. Cook and stir for 2 minutes or until thickened.
  4. Stir in peas and ½ cup cream, parsley, garlic, salt & pepper.
  5. Stir in chicken
  6. Spoon pot pie ingredients into two 9” pans. Cover with pie crust (one each)
  7. Whisk egg and 1 tbsp cream and brush on top of pastry after slicing or making design on top with a fork
  8. Bake for 30-35 min until brown on top

TURKEY SOUP


INGREDIENTS

  • 2 cloves garlic (minced
  • 1 tbsp olive oil
  • 1 large onion (diced)
  • 2 large carrots (chopped)
  • 2 celery stalks (chopped)
  • 1.5 cups of leftover stuffing (optional)
  • 2 cups leftover turkey (white or dark meat is fine)
  • 1/4 cup of uncooked rice
  • 6–7 cups of chicken broth
  • Chicken Bouillon
  • juice and zest of 1 lemon
  • parsley

INSTRUCTIONS

  1. Throw all your veggies into a heated pot with olive oil for 5-10 minutes. Add in salt, pepper and garlic.
  2. Pour about 6-7 cups of chicken broth into the pot.
  3. While the soup is bubbling away, shred the turkey.
  4. Add in your turkey and a handful of parsley stems.
  5. Add the rice and continue simmering.
  6. Let the soup simmer away for about 20 minutes. Taste for seasoning.
  7. Add in the Bouillon. Add it in 1 tbsp at a time, making sure you mix it well each time until desired flavor is achieved.
  8. Add in juice of a lemon to taste.
  9. Now pour yourself a hearty bowl of soup

    Note: you can choose to add the turkey carcass right into the pot to boil with the veggies. Once removed you can take off any remaining meat. This just up levels the flavour of your soup and uses up every last bit of your Thanksgiving turkey.

TURKEY SALAD ON A CROISSANT


INGREDIENTS


  • 2 cups diced, cooked turkey
  • 1 cup dried cranberries or sliced grapes
  • 3/4 cup diced apple (my fav is honeycrips or granny smith)
  • 2 stalks chopped celery
  • 1/2 cup chopped pecans
  • 1/2 cup nonfat plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 1/2 teaspoons cider vinegar
  • 3/4 teaspoon salt
  • 3/4 teaspoon dried thyme
  • 1/2 teaspoon honey
  • 1/4 teaspoon Dijon mustard
  • Croissants or Lettuce wraps

INSTRUCTIONS


  1.  Combine turkey, cranberries, apples, celery, and pecans, stirring gently.
  2. In a small bowl, whisk together Greek yogurt, mayonnaise, milk, vinegar, salt, thyme, honey, and mustard.
  3. Pour dressing over chicken mixture and gently stir to combine evenly.
  4. Serve as desired – as a sandwich, wrap, or salad plate. I could eat this one for lunch for a week!



Now most of us are headed into a turkey coma in the next couple days with our jeans unbuttoned or some forgiving yoga pants on.
