How to cook through half a hog

This post is meant to show you how much easier ordering meat wholesale is compared to buying individual cuts from the grocery store. Not only that, it’s also healthier, more tasteful and so comforting to have in your freezer!

We sell pork by the half or whole hog. Meat is priced by the pound for the entire “share”. $6.50/lb based on the “hanging weight” which is the weight of the carcass before it is cut, packed and frozen.

You can totally customize each cut!

By purchasing your meat directly from your farmer (us!) you cut out the middle man. Our animals are born and raised here on our farm, respected and carefully taken care of. They take a quick trip to the abattoir (butcher) and come back into our farm store ready to enjoy.

When purchasing a share it can be delivered directly to your door as long as you’re within the Lindsay, Peterborough, Buckhorn, Bobcaygeon, Fenelon Falls area, otherwise you can pick it up straight from the farm or even the butchers.

With half a hog you get to customize your cuts with choices from:

  • smoked ham roasts or steaks

  • shoulder roasts

  • butt roasts and/or butt chops

  • loin chops or pork tenderloin or peameal bacon

  • bacon

  • ground pork and/or sausages/patties

  • spare ribs

  • You get to choose:

    • the size of roast you want (ex 3lbs)

    • the thickness of your chops (ex 1 inch)

    • whether you want all roasts, all chops or some of each

    • whether you want your side pork sliced fresh or smoked for bacon (we recommend smoking)

    • the flavor of your sausage if you’d like your ground pork done up that way (honey garlic, hot italian, mild italian, Oktoberfest, BBQ, Farm Style, breakfast links)

    • you can also ask for smoked hocks & soup bones if that’s something you like!

Now, what can you do with all of this handcrafted meat? OOhhhh the possibilities are endless!

Smoked Ham Roasts

  • Sunday dinner, roast it along side some scalloped potatoes and salad.

  • Use the leftovers to jazz up all the casseroles and quiches throughout the week.

Smoked Ham Steaks

  • We pan fry these for breakfast and they are devoured as fast as bacon.

Shoulder Roasts

  • Pulled pork sandwiches, hot and saucy out of the crock pot with a pile of slaw and sweet potato chips.

  • Left over pulled pork stuffed into quesadillas with cheese, onions and peppers, dipped in salsa and Greek yogurt.

  • Shredded BBQ pork on pizza

Butt Chops

  • We personally get our Butt Roasts cut into 1” thick chops. They do great on the BBQ, in a pan, or in the slow cooker drowning in a cream of mushroom sauce.

Loin Chops

  • Not like the grocery store pork chops you might be used to. These don’t turn into hockey pucks on the BBQ, they’re incredibly juicy, tender and mouthwatering!

Bacon

  • You just have to try our farm fresh bacon, it’s out of this world good. It comes in 1lb packages and is smoked to perfection. We’re so proud of it.

  • I don’t think I need to elaborate on the possibilities of bacon.. just enjoy.

Ground pork/sausages

  • Use ground pork for tacos or tourteire (delicious mixed with ground beef as well)

  • Ground pork cooked into a potato hash with fried vegetables is my personal fav

  • You can get the ground pork made up into sausages of many flavours:

    • Honey garlic, BBQ, Hot Italian, Oktoberfest, Farm Style or little Breakfast links.

Spare Ribs

  • Purely to save time I do these ribs in the instant pot, then lay flat on a pan/baking dish smothered in our favourite BBQ sauce and let them sit under the broiler for a few minutes to caramelize. Finger lickin’ good.

Buying meat this way, you’ve got meal plans done and dusted for months in advance. '
