Healthy BBQ Pulled Pork Sliders with Sweet Potato Fries and BBQ'd Pineapple Skewers


BBQ Pulled Pork Sliders:

Ingredients:

  • 1 lb (450g) lean pork loin roast from Red Door Ranch
  • 1 cup chicken or vegetable broth
  • 1 cup unsweetened applesauce
  • 1/2 cup low-sugar BBQ sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Whole grain slider buns or small whole grain rolls
  • Coleslaw mix (optional, for topping)

Instructions:

  1. Place the pork loin roast in a slow cooker. In a mixing bowl, combine the chicken or vegetable broth, unsweetened applesauce, BBQ sauce, apple cider vinegar, smoked paprika, and garlic powder. Pour the mixture over the pork loin roast.
  2. Cook the pork on low heat for 6-8 hours or until it is tender and easily shreds with a fork.
  3. Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and stir it into the sauce.
  4. To assemble the sliders, place a generous portion of the BBQ pulled pork on each whole grain slider bun or roll. Top with coleslaw if desired.

  • 2 large sweet potatoes, scrubbed and cut into fries
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, toss the sweet potato fries with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Spread the seasoned sweet potato fries in a single layer on the prepared baking sheet.
  4. Bake the sweet potato fries in the preheated oven for 20-25 minutes, flipping halfway through, or until they are golden brown and crispy.

BBQ'd Pineapple Skewers:

Ingredients:

  • 1 fresh pineapple, peeled, cored, and cut into chunks
  • 1/4 cup low-sugar BBQ sauce
  • Wooden skewers, soaked in water for at least 30 minutes to prevent burning

Instructions:

  1. Preheat your grill to medium-high heat.
  2. Thread the pineapple chunks onto the soaked wooden skewers.
  3. Brush the pineapple skewers with low-sugar BBQ sauce.
  4. Grill the pineapple skewers for 4-5 minutes per side, or until they are lightly caramelized and heated through.
  5. Remove the pineapple skewers from the grill and serve warm.
